Storico Fresco's founder, Mike Patrick, began exploring the Italian countryside three years ago, hoping to find some of the world's most extraordinary pasta recipes. He found them by working in small pasta shops, in monasteries, in the homes of Italian grandmothers and on traditional Italian farms. During these journeys, the chef and sommelier not only learned a lot about Old World cooking, he discovered that Italy and its pasta have a problem : these extraordinary recipes are disappearing. Although the country's elder generations are eager to pass along these recipes and to impart the cooking techniques that create them, many younger Italians aren't interested in carrying on the customs. So these great traditions are being lost as the older generations pass away. Inspired by the unique food traditions of Old Italy, they carefully recreate that country’s nearly forgotten pasta recipes with farm-fresh ingredients, a dedication to authenticity, and a full measure of passion that Mike learned from the Italian nonnas, chefs, cooks and artisan pasta makers he collaborated with in Italy.
